Vanilla Cupcakes
Cupcakes are associated with celebrations or treats and often they are loaded with lots of sugar and other nasty ingredients, so why not make them a little healthier. I have used monk fruit – which is a natural sweetener in these to reduce the amount of other sugar required. Monk fruit works really well in baked goods and doesn’t leave an after taste.

Instructions
  1. Preheat oven to 180 degrees Celsius.
  2. In a bowl mix together the dry ingredients.
  3. In a separate bowl mix together the wet ingredients, ensuring that they are well combined.
  4. Pour wet mixture into the dry mixture and mix well.
  5. Use a little coconut oil to grease the cupcake tray or use cupcake wrappers.
  6. Add dessert spoon dollops in each cupcake hole allowing a little room to rise.
  7. Bake in the oven for approximately 20-25 minutes until a skewer comes out clean.
  8. Allow to cool slightly before eating.
Recipe Notes
  • Enjoy as is, or you can make a little icing to go on top. If making icing use xylitol icing sugar or using some nut butter and coconut cream to create some icing.
