Vanilla Cupcakes
Cupcakes are associated with celebrations or treats and often they are loaded with lots of sugar and other nasty ingredients, so why not make them a little healthier.
I have used monk fruit - which is a natural sweetener in these to reduce the amount of other sugar required. Monk fruit works really well in baked goods and doesn't leave an after taste.

Ingredients
- 1/2 cup coconut flour
- 1 cup chickpea flour
- 1/4 cup coconut sugar
- 1 tsp baking powder
- 1 1/2 tsp vanilla powder
- 3/4 cup coconut oil – melted
- 4 eggs
- 1/4 cup maple syrup
- 1/2 cup almond milk or water
- 1/2 tbsp monk fruit powder

Instructions
- Preheat oven to 180 degrees Celsius.
- In a bowl mix together the dry ingredients.
- In a separate bowl mix together the wet ingredients, ensuring that they are well combined.
- Pour wet mixture into the dry mixture and mix well.
- Use a little coconut oil to grease the cupcake tray or use cupcake wrappers.
- Add dessert spoon dollops in each cupcake hole allowing a little room to rise.
- Bake in the oven for approximately 20-25 minutes until a skewer comes out clean.
- Allow to cool slightly before eating.
Recipe Notes
- Enjoy as is, or you can make a little icing to go on top. If making icing use xylitol icing sugar or using some nut butter and coconut cream to create some icing.
