Sweet potato is a very versatile vegetable and is used in a variety of different types of dishes from savoury to sweet. It is often substituted in baked goods to boost up the nutrition and reduce the amount of flour required. So why not make a dessert using it? This mousse is savoury yet sweet and super quick to make when your time poor.

- 1 cup sweet potato - mashed cold
- 1/2 cup canned coconut milk
- 1 tbsp coconut syrup, rice malt syrup or raw honey
- 1/2 tsp cinnamon

Instructions
- Blend all ingredients together until smooth and creamy.
- Pour into dishes and serve straight away or put in the fridge for later.
- Will last in the fridge for 3-4 days.
