Sweet Potato, Cauliflower and Lentil Bowl
Vegetarian dishes don’t need to be tasteless and are often nice for a mid-week dinner when you are time poor or feel like something a little lighter or different. Lentils are super easy to use and disguise well in a lot of dishes due to their mild flavour.

Ingredients
- 2 tbsp coconut oil
- 2 red onions – finely chopped
- 4 cloves garlic – finely chopped or crushed
- 1 medium sweet potato – cubed
- 1 small cauliflower – chopped
- 3 cups chopped tomatoes roma work well
- 4 small zucchini’s – chopped
- 2 cup tins of lentils or 1uncooked lentils
- 1 tsp turmeric
- 1 tsp cumin
- ½ tsp cayenne pepper

Instructions
- If using uncooked lentils, place lentil into a saucepan adding approximately 2 cups of water. Bring lentils to the boil and then reduce to a simmer, covering lentils for approximately 30-45 minutes, stirring occasionally. Add additional water if required.
- Add oil, spices, garlic and onion to a fry pan and sauté until onion has softened slightly.
- Add chopped cauliflower, sweet potato, tomatoes and zucchini and mix through. Cover and cook for 10 minutes.
- Add cooked lentils or tinned lentils and stir through. Cover and cook for a further 10 minutes until potato is soft.
- Serve and enjoy.
Recipe Notes
Add a small serve of your preferred choice of protein such as; fish, beef, pork, chicken or eggs if you feel you need more protein.
