Sweet Potato and Peanut Soup
Sweet yet salty combination that works so well. Sweet potato is full of flavour and gives this soup the perfect creamy finish.

  1. Slice sweet potato and onion into small pieces so they cook quickly and add to saucepan.
  2. Add 2 cup of vegetable stock and bring to the boil. Then reduce to medium heat for about 15 minutes until sweet potato is soft. Remove from heat.
  3. Using a blender, add sweet potato and onion and the liquid left over, followed by peanut butter and additional water. Depending on your blender size you may need to do this in 2 batches. Add additional water if required to get to a smooth consistency.
  4. Season with salt and pepper if desired and serve.
Recipe Notes
  • Try adding ½ to 1 tsp of cinnamon for something different.
  • You will need to add your choice of protein to this meal. Roasted chickpeas, beans or lentils are great if vegetarian, otherwise your preferred meat option.
