Stuffed Capsicums
Capsicums are such a versatile vegetable and make a great cup to stuff with fillings.

Ingredients

capsicums
500

turkey mince
1/2`
cup
diced bacon
1
head
broccoli

zucchini

red onion

tbsp
soy sauce
or tamari
dash
coconut oil
Instructions
Start by adding a dash of oil to a fry pan on medium heat, followed by turkey mince.
Dice onion and add to mince along with diced bacon and continue to cook for a good 5 minutes.
Chop broccoli into small pieces and grate zucchini. Add to fry pan and mix through mince.
Allow to cook for 10 minutes or until mince is cooked through.
In the meantime preheat oven to 180 degrees Celsius.
Add soy sauce or tamari to mince and mix through. Remove from heat.
To get your capsicums ready, rinse and chop the tops off the capsicums.
Scoop out seeds and membrane and place on a baking tray lined with baking paper.
Fill capsicums up with mince and place in the oven for about 25 minutes to allow the capsicums to become soft but still a little firm.
Serve with additional vegetables or salad.
