Stuffed Capsicums

Ingredients
- 4 large capsicums
- 500 g turkey mince
- 1/2` cup diced bacon
- 1 head broccoli
- 1 large zucchini
- 1 red onion
- 2 tbsp soy sauce or tamari
- dash coconut oil

Instructions
- Start by adding a dash of oil to a fry pan on medium heat, followed by turkey mince.
- Dice onion and add to mince along with diced bacon and continue to cook for a good 5 minutes.
- Chop broccoli into small pieces and grate zucchini. Add to fry pan and mix through mince.
- Allow to cook for 10 minutes or until mince is cooked through.
- In the meantime preheat oven to 180 degrees Celsius.
- Add soy sauce or tamari to mince and mix through. Remove from heat.
- To get your capsicums ready, rinse and chop the tops off the capsicums.
- Scoop out seeds and membrane and place on a baking tray lined with baking paper.
- Fill capsicums up with mince and place in the oven for about 25 minutes to allow the capsicums to become soft but still a little firm.
- Serve with additional vegetables or salad.
