Spiced Pumpkin Porridge Squares

Ingredients
- 2 cups wholegrain oats gluten free if required
- 1/4 cup protein powder I use vanilla pea protein
- 1 1/2 cups pumpkin puree fresh is best
- 1/2 cup almond, coconut or rice milk
- 1 egg
- 2 tbsp raw honey or rice malt syrup
- 1 tsp cinnamon
- 1 tsp ginger powder

Instructions
- Preheat oven to 180 degrees Celsius. Line a tray with baking paper.
- Add oats, protein powder, ginger and cinnamon to a bowl and mix.
- In a separate bowl whisk together pumpkin puree, rice malt syrup, almond milk and egg.
- Mix the wet and dry ingredients together until a thick batter is formed.
- Pour into lined tray and bake in the oven for 40-45 minutes until cooked.
- Allow to cool 15 minutes before slicing.
Recipe Notes
- Get creative and change the spices or adjust quantities to suit your preferred taste.
- You could swap wholegrain oats for quinoa flakes, however quinoa flakes are more bitter in flavour so you may need to adjust sweetness.
