Add pork to a slow cooker and add soy sauce, apple cider vinegar and water.
Spread the tomato paste and garlic over the pork to coat.
Put on ‘low’ for a good 8-10 hours. Longer the better.
Once cooked and you are happy with it, remove from slow cooker and pull apart the meat and set aside.
To make the salsa, dice the avocado, capsicum, red onion and tomato and mix together in a bowl. Chop some fresh parsley and coriander or your preferred herbs and toss through.
Using your iceberg lettuce, pull away lettuce leaves trying to keep them intact as possible to make your taco bowls.
