Ingredients
Pulled Pork
- 2 -2.5 kg boneless shoulder of Pork
- 4 tbsp tomato paste
- 3 cloves garlic crushed
- 1 tbsp soy sauce/ tamari
- 1/4 cup apple cider vinegar
- 1/2 cup water
Salsa
- 1 avocado
- 1 red onion
- 1 capsicum
- 1 tomato
- 1 handful fresh parsley and coriander
- 1 iceberg lettuce

Instructions
- Add pork to a slow cooker and add soy sauce, apple cider vinegar and water.
- Spread the tomato paste and garlic over the pork to coat.
- Put on ‘low’ for a good 8-10 hours. Longer the better.
- Once cooked and you are happy with it, remove from slow cooker and pull apart the meat and set aside.
- To make the salsa, dice the avocado, capsicum, red onion and tomato and mix together in a bowl. Chop some fresh parsley and coriander or your preferred herbs and toss through.
- Using your iceberg lettuce, pull away lettuce leaves trying to keep them intact as possible to make your taco bowls.
- Add some pork followed by some salsa and serve.
