Savoury Mince

Ingredients
- 10 brussels sprouts
- 1 capsicum
- 1/2 cup frozen peas
- 1/2 cup frozen corn kernals
- 1 red onion
- 1 tin lentils
- 500 g turkey mince
- 1 tbsp coconut or olive oil
- 1/4 cup tomato paste
- 3/4 cup coconut cream
- 2 tbsp soy sauce or tamari

Instructions
- Add oil to a wok or fry pan on medium heat.
- Once hot add turkey mince and cook for about 10 minutes until turkey is almost cooked.
- In the meantime chop Brussels sprouts and capsicum and finely dice onion.
- Add to wok and continue to cook for about 10 minutes until vegetables start to get soft.
- Add tomato paste, coconut cream and soy sauce and mix through well.
- Drain and rinse lentils and add.
- Allow to heat through for 5 minutes and then serve.
- Can serve with some sweet potato mash or cauliflower mash or have on its own.
