Ingredients
- 1 kg lamb mince
- 2 eggs
- 1 large zucchini
- 1 red onion
- 2 cloves garlic
- 1 tbsp mixed herbs
- 90 g tomato paste
- 1 400ml can diced tomatoes

Instructions
- Preheat oven to 180 degrees Celsius.
- Grate zucchini and finely dice onion and place into a mixing bowl.
- Crush garlic and add to bowl.
- Add mixed herbs, lamb mince and eggs and mix well with your hands until everything is combined.
- Roll into balls, any size you want until the mixture is gone and place into a baking tray.
- In a separate bowl mixed together diced tomatoes and tomato paste and pour over the meatballs to cover.
- Place in oven for 25-30 minutes until meatballs are cooked.
- Serve with vegetables or salad.
