Meatballs
Meatballs make a great mid-week dinner as they are so easy to make and you can be as creative as you want. I really like using lamb mince or turkey mince however any mince works well.

Instructions
  1. Preheat oven to 180 degrees Celsius.
  2. Grate zucchini and finely dice onion and place into a mixing bowl.
  3. Crush garlic and add to bowl.
  4. Add mixed herbs, lamb mince and eggs and mix well with your hands until everything is combined.
  5. Roll into balls, any size you want until the mixture is gone and place into a baking tray.
  6. In a separate bowl mixed together diced tomatoes and tomato paste and pour over the meatballs to cover.
  7. Place in oven for 25-30 minutes until meatballs are cooked.
  8. Serve with vegetables or salad.
