Creamy Mustard Chicken
A healthy take on a popular chicken dish that doesn’t take a lot work. Next time you consider buying a pre-made sauce try this!

Ingredients

chicken

handful of green beans

red onion

broccoli

capsicum

red cabbage

coconut cream

Dijon mustard

tsp
wholegrain mustard
Instructions
Chop green beans, red onion, broccoli, capsicum, and cabbage in bite sized pieces.
Add to a wok or fry pan on medium heat, add a little olive oil if your pan isn’t non-stick.
Cook vegetables for about 10 minutes or until they start getting soft. Remove fry pan and set aside while you cook chicken.
Chop chicken into bite sized pieces, add to wok and brown chicken until cooked through, approx. 10 minutes.
While chicken is cooking start making your sauce. Add coconut cream, mustard and wholegrain mustard to a small bowl and mix well.
Once chicken is cooked return vegetables to wok and add sauce. Heat through for another 5 minutes, serve and enjoy.
