Creamy Chicken and Vegetables
This is perfect for a mid-week dinner when you are time poor but still want to eat well. Buying a cooked chicken is perfect for this recipe. You can always mix up the vegetables with what you have in the fridge.

Ingredients

eggplant
chopped

red capsicum
chopped (or preferred colour)

button mushrooms
chopped

cup
coconut cream
200
g
cooked chicken
shredded
Salt and pepper to taste
Instructions
Chop all vegetables into small bite sized pieces and add to a fry pan with coconut cream on medium heat.
Allow to cook for approximately 15 minutes until vegetables are cooked and coconut cream is absorbing.
Add chicken and season with salt and pepper.
Once chicken is hot, serve.
