Creamy Cauliflower Soup
Cauliflower is such a versatile ingredient and goes well in just about anything so why not soup?This is such a creamy soup that won’t leave you bloated and sluggish.

Instructions
  1. Chop cauliflower, potato and onion in small pieces and place in a saucepan.
  2. Add the 2 cups of vegetable stock to the saucepan and turn to high heat.
  3. Once boiling, reduce to low-medium heat for about 20 minutes until potato is soft.
  4. Remove from heat and add to your blender followed by coconut cream and blend. Depending on your blender size you may need to do this in 2 batches.
  5. Season with salt and pepper if desired and serve.
Recipe Notes
  • You will need to add your choice of protein to this meal. Roasted chickpeas, beans or lentils are great if vegetarian, otherwise your preferred meat option.
