Instructions
- Chop cauliflower, potato and onion in small pieces and place in a saucepan.
- Add the 2 cups of vegetable stock to the saucepan and turn to high heat.
- Once boiling, reduce to low-medium heat for about 20 minutes until potato is soft.
- Remove from heat and add to your blender followed by coconut cream and blend. Depending on your blender size you may need to do this in 2 batches.
- Season with salt and pepper if desired and serve.
Recipe Notes
- You will need to add your choice of protein to this meal. Roasted chickpeas, beans or lentils are great if vegetarian, otherwise your preferred meat option.
