Ingredients
- ⅓ cup coconut cream – whipped
- 1 tbsp plant based protein powder
- ⅓ cup blueberries
- ½ banana
- ½ cup homemade granola Refer to ginger cinnamon and honey toasted granola recipe
- 1 tsp raw honey – optional

Instructions
- Whip coconut cream until thick peaks form and stir through protein powder.
- In a separate bowl assemble with coconut cream, fruit and granola to your liking.
- Drizzle honey if desired and enjoy.
Recipe Notes
You can always replace the coconut cream and protein powder for ½ cup of natural yoghurt. To get the best result with whipping coconut cream, you must buy full fat coconut cream or coconut milk and refrigerate overnight to allow cream to settle on top. In the morning scoop off thick cream for whipping.
