Coconut Banana Bread
I really like cooking with coconut flour and enjoy the subtle sweetness it provides. This loaf is very quick to throw together and goes nicely with savoury and sweet toppings.
Instructions
  1. Preheat oven to 160 degrees Celsius and grease a loaf tin.
  2. Whisk eggs and mix through mashed bananas, coconut oil and rice malt syrup until well combined.
  3. Add coconut flour and baking powder and fold through.
  4. Allow mixture to sit for 5-10 minutes to allow coconut flour to finish absorbing liquid.
  5. Pour into a loaf tin and bake in the oven for 50 minutes or until skewer comes out clean.
