Coconut Banana Bread

- 3 bananas – mashed
- 6 eggs
- ¼ cup coconut oil
- 2 tbsp rice malt syrup
- ¾ cup coconut flour – sifted
- 1 tsp baking powder

Instructions
- Preheat oven to 160 degrees Celsius and grease a loaf tin.
- Whisk eggs and mix through mashed bananas, coconut oil and rice malt syrup until well combined.
- Add coconut flour and baking powder and fold through.
- Allow mixture to sit for 5-10 minutes to allow coconut flour to finish absorbing liquid.
- Pour into a loaf tin and bake in the oven for 50 minutes or until skewer comes out clean.
