Chocolate Date Cupcakes with Date Caramel Sauce
Cupcakes make a great little snack for times when you have visitors or for a quick dessert every now and again. These cupcakes are sweetened with medjool dates which actually contain minerals including; copper, potassium, zinc, magnesium and iron and are also fibre rich and can help balance blood sugar levels.

Ingredients
- ¼ cup coconut flour
- ¼ cup cacao powder
- ½ tsp vanilla powder or 1 tsp vanilla essence
- 3 eggs
- 4 medjool dates – pitted
- ¼ cup coconut cream or milk
Date Caramel Sauce
- 5 medjool dates – pitted
- 5 tbsp coconut cream or milk scoop thicker cream off the top
- 2 tsp vanilla essence or 1 tsp vanilla powder

Instructions
- Preheat oven to 180 degrees Celsius.
- Place dates, eggs and coconut milk into a blender and blend until smooth.
- In a bowl add coconut flour, cacao powder and vanilla powder and mix to combine.
- Pour in egg mixture and mix until combined. Allow to sit for 5 minutes to allow coconut flour to absorb liquid.
- Grease or line cupcake tray with cupcake wrappers and add tbsp dollups into each.
- Bake for 10 minutes until skewer comes out clean.
- If using larger cupcake wrappers cook for 18-20 minutes until skewer comes out clean.
Date Caramel Sauce
- Blend all ingredients together starting with 4 tbsp coconut cream to form a creamy mixture. If mixture is too thick add the additional 1 tbsp coconut cream.
