Chocolate Coconut Cookies
Coconut flour is a great substitute to normal flour and is full of fiber, protein and healthy fats. Free of gluten makes it ideal for those that are intolerant or allergic. Coconut flour is easy to digest and low in sugar thereby great for keeping blood sugar levels in check. When it comes to cooking with coconut flour you do not require much flour like you normally would for recipes. It is very absorbent and requires 2-3 times the amount of liquid you would ordinarily use.

Ingredients
- 1/4 cup coconut flour
- 1/2 cup almond butter
- 3 eggs
- 1 tsp baking powder
- 80 g dark chocolate 85% ideally
- 1-2 tbsp raw honey or rice malt syrup

Instructions
- Preheat oven to 180 degrees Celsius.
- Combine almond butter, eggs and raw honey and whisk until well combined.
- Mix in coconut flour and baking powder.
- Chop chocolate into small pieces and mix through.
- Roll into balls and place on a lined baking tray.
- Bake for 12 minutes until biscuits are cooked and slightly brown on top.
