Chocolate Coated Nut Bites
A simple alternative to bought chocolates that still taste great and are much healthier.

  1. Add nut butter, coconut oil and rice malt syrup to a bowl and mix until well combined.
  2. Using a chocolate tray of choice pour nut butter mixture in. You will probably find you will need to do this a few times depending on the size of your moulds.
  3. Place in freezer for about 30 minutes to an hour (again depending on mould tray) until hard. Press out and place in a container until you have finished with the mixture and store in freezer.
  4. Using a double boiler – break chocolate into chunks and place in saucepan. This method prevents the chocolate burning. On low heat, stir until chocolate has melted and is nice and smooth.
  5. Remove from heat.
  6. Grab the nut butter bites out of the freezer and individually place in chocolate and coat well.
  7. Place on a lined tray with baking paper. Continue to coat until all are completed or you have run out of chocolate.
  8. Place back in freezer for 1 hour to set well.
  9. Enjoy and store in freezer to keep.
Recipe Notes
  • You may require 2 blocks of dark chocolate depending on your chocolate mould.
  • Mix up the nut butter for different taste!
