Chocolate Coated Nut Bites

Ingredients
- 1 block dark chocolate 60% or higher
- 250 g nut butter I used cashew butter
- 1/2 cup coconut oil melted
- 1/4 cup rice malt syrup

Instructions
- Add nut butter, coconut oil and rice malt syrup to a bowl and mix until well combined.
- Using a chocolate tray of choice pour nut butter mixture in. You will probably find you will need to do this a few times depending on the size of your moulds.
- Place in freezer for about 30 minutes to an hour (again depending on mould tray) until hard. Press out and place in a container until you have finished with the mixture and store in freezer.
- Using a double boiler – break chocolate into chunks and place in saucepan. This method prevents the chocolate burning. On low heat, stir until chocolate has melted and is nice and smooth.
- Remove from heat.
- Grab the nut butter bites out of the freezer and individually place in chocolate and coat well.
- Place on a lined tray with baking paper. Continue to coat until all are completed or you have run out of chocolate.
- Place back in freezer for 1 hour to set well.
- Enjoy and store in freezer to keep.
Recipe Notes
- You may require 2 blocks of dark chocolate depending on your chocolate mould.
- Mix up the nut butter for different taste!
