Choc Chip Biscuits
I love biscuits as a snack especially during the working week as they are super easy to grab on the go. These biscuits are made on chickpea flour which I love to bake with due to its versatility and also because it contains protein and complex carbs to keep me going until my next meal.

  1. Preheat oven to 180 degrees fan forced.
  2. Add chickpea flour and sugar to a bowl and mix.
  3. Roughly chop chocolate into small pieces and add to dry mixture once completed.
  4. In a separate bowl whisk together eggs, coconut oil and vanilla essence.
  5. Add wet mixture to dry mixture and mix until combined.
  6. Line a baking tray with baking paper.
  7. Roll mixture into balls and press down slightly. Bake in oven for 12-15 minutes until lightly golden on top and cooked.
  8. Makes about 12 decent sized biscuits.
