Choc Chip Biscuits
I love biscuits as a snack especially during the working week as they are super easy to grab on the go. These biscuits are made on chickpea flour which I love to bake with due to its versatility and also because it contains protein and complex carbs to keep me going until my next meal.

Ingredients
- 1 1/2 cups chickpea flour
- 1/4 cup coconut sugar
- 2 tsp vanilla essence
- 2 eggs
- 1/3 cup coconut oil – melted
- 100 g dark chocolate 85% ideally

Instructions
- Preheat oven to 180 degrees fan forced.
- Add chickpea flour and sugar to a bowl and mix.
- Roughly chop chocolate into small pieces and add to dry mixture once completed.
- In a separate bowl whisk together eggs, coconut oil and vanilla essence.
- Add wet mixture to dry mixture and mix until combined.
- Line a baking tray with baking paper.
- Roll mixture into balls and press down slightly. Bake in oven for 12-15 minutes until lightly golden on top and cooked.
- Makes about 12 decent sized biscuits.
