Chicken, Avocado and Quinoa Salad

Ingredients

shredded chicken
roast chicken works well for this
1/4
cup
cooked quinoa
1
small
carrot
1/3
cucumber
1
large handful
salad leaves
1
small handful
sprouts
alfalfa or bean sprouts
1/2
small
avocado
Dressing
1
tbsp
fresh lemon juice
2
tsp
olive oil
1
tsp
wholegrain mustard
1
tsp
honey – optional
Instructions
Cook quinoa according to directions on packet and set aside to cool.
Start by grating carrot and dicing cucumber.
Add salad leaves to a bowl and add carrot and cucumber and toss.
Add quinoa and alfalfa sprouts and toss lightly.
Add chicken and avocado.
Make your dressing mixing the lemon juice, olive oil, wholegrain mustard and honey together.
Pour over salad and enjoy.
