Chicken, Avocado and Quinoa Salad

  1. Cook quinoa according to directions on packet and set aside to cool.
  2. Start by grating carrot and dicing cucumber.
  3. Add salad leaves to a bowl and add carrot and cucumber and toss.
  4. Add quinoa and alfalfa sprouts and toss lightly.
  5. Add chicken and avocado.
  6. Make your dressing mixing the lemon juice, olive oil, wholegrain mustard and honey together.
  7. Pour over salad and enjoy.
