Cauliflower ‘Rice Pudding’

Ingredients
- 1/2 medium head of cauliflower processed florets makes approx. 2 ½-3 cups rice
- 400 ml can coconut milk
- 1 tsp vanilla powder or 2 tsp vanilla essence
- 2 tsp rice malt syrup
- 1/4 cup coconut cream

Instructions
- Add cauliflower florets to a food process and process to make a rice consistency.
- Add cauliflower rice, coconut milk and vanilla powder to a saucepan on medium heat. Once simmering allow to cook for 15 minutes until cauliflower is soft.
- Add rice malt syrup and allow to simmer for a further few minutes.
- Remove from heat and stir through coconut cream.
- Serve immediately while hot or place in the fridge and serve cold. Top with your choice of toppings.
Recipe Notes
- Add cinnamon or any other spice you like (e.g. ginger, nutmeg, allspice, mixed spice).
- Try different milks (e.g. rice, cashew, almond).
- Add cacao powder to give it a chocolate flavour.
- Add a different sweetener (e.g. stevia, raw honey, maple syrup).
- Add some dried fruit (e.g. goji berries, blueberries, raisins).
- Add different toppings (e.g. shredded coconut, fresh fruit, chia seeds, raw nuts/seeds).
- Add in nut butters to change the flavour.
