Baked Honey Mustard Salmon and Veg
For those that love salmon, this will surely be a hit. The best part is that this meal is quick and tasty and great for those mid-week meals.

Ingredients

salmon fillets

small
sweet potato

handful
sugar snap peas

capsicum

tsp
raw honey
3
tsp
Dijon mustard
2
tsp
coconut oil
salt and pepper
Instructions
Line a baking tray with baking paper. Preheat oven to 180 degrees Celsius.
Place salmon fillets on the tray.
Cut sweet potato in small diced pieces and spread around the salmon on the tray.
Cut capsicum and trim the stems from the sugar snap peas and place around the salmon on the tray. Doesn’t matter if things are overlapping.
Use a little coconut oil, to drizzle over veggies, season with salt and pepper if you like.
To make the mustard paste, simply add the honey and Dijon mustard together and mix well. Use a cooking brush and brush over the salmon.
Place in oven for 20-25 minutes until cooked to your liking.
