Baked Honey Mustard Salmon and Veg

Ingredients
- 2 salmon fillets
- 1 small sweet potato
- 1 handful sugar snap peas
- 1 capsicum
- 1 tsp raw honey
- 3 tsp Dijon mustard
- 2 tsp coconut oil
- salt and pepper

Instructions
- Line a baking tray with baking paper. Preheat oven to 180 degrees Celsius.
- Place salmon fillets on the tray.
- Cut sweet potato in small diced pieces and spread around the salmon on the tray.
- Cut capsicum and trim the stems from the sugar snap peas and place around the salmon on the tray. Doesn’t matter if things are overlapping.
- Use a little coconut oil, to drizzle over veggies, season with salt and pepper if you like.
- To make the mustard paste, simply add the honey and Dijon mustard together and mix well. Use a cooking brush and brush over the salmon.
- Place in oven for 20-25 minutes until cooked to your liking.
