Apple Crumble
Apples are a great source of fibre, vitamin C and antioxidants and have been shown to keep blood sugar in check, cholesterol down and great for a healthy gut. Apples are used in various desserts with the most common being apple crumble and apple sponge cakes. I have created a healthier version so you can enjoy this dessert without feeling guilty.

Ingredients
Stewed Apples
- 2 apples
- 1-2 tbsp water
- 1 tsp vanilla essence
- ½ tsp all spice
Crumble
- 2 tbsp almond meal
- 2 tbsp shredded coconut
- 2 tsp coconut sugar
- ½ tsp cinnamon
- 1 tbsp coconut oil

Instructions
- Chop apples into bite size pieces and place in a saucepan with water and vanilla essence on a medium/low heat.
- Allow apples to cook for approximately 10 minutes to soften.
- nce cooked remove from heat, drain liquid and stir through all spice.
- Preheat oven to 180 degrees fan forced and grease 2 ramekins.
- To make the crumble, mix all ingredients together in a small bowl.
- Separate stewed apple evenly between the 2 ramekins and top with even amounts of crumble.
- Place in oven for approximately 20 minutes or until crumble has become golden.
