Apple and Banana Breakfast Squares

Ingredients
- 2 apples – grated
- 2 bananas – mashed
- 1½ cups wholegrain oats
- 2 eggs
- ¼ cup coconut oil – melted
- ¼ cup coconut flour
- 1 tsp vanilla powder Or 2 tsp of vanilla essence
- 1½ tsp baking powder
- 2 tsp cinnamon

Instructions
- Preheat oven to 180 degrees Celsius and line a slice tray with baking paper.
- Place oats into a blender and process until a flour is formed.
- Pour into a bowl and add coconut flour, baking powder, vanilla powder and cinnamon.
- In a separate bowl combine grated apples, mashed bananas, eggs and coconut oil.
- Add wet mixture to dry ingredients and mix to combine.
- Pour mixture into prepared slice tray and bake for 25-30 minutes until skewer comes out clean.
