Cinnamon and Chilli Roasted Cauliflower and Chickpeas
Cauliflower is a great vegetable, it is full of fibre and great for aiding the liver in detoxification. Chickpeas are a great source of vegetarian protein and are a great source of folate, iron and zinc. Also shown to improve blood glucose levels and lower cholesterol.
I really love the combination of cinnamon and chilli together and love to roast my cauliflower and chickpeas.
Instructions
- Preheat oven to 180 degrees fan-forced.
- Line a baking tray with baking paper.
- Chop cauliflower florets up into bit size pieces and spread out on the tray.
- Drain and rinse chickpeas and pour onto tray.
- Spray olive oil over the cauliflower and chickpeas to coat well.
- Sprinkle over cinnamon, followed by some chilli powder.
- Place in the oven for 50 minutes until cauliflower is cooked and chickpeas are slightly crunchy.

Make sure you add some additional protein to this to create a meal along with additional vegetables.
