Cinnamon and Chilli Roasted Cauliflower and Chickpeas
Cauliflower is a great vegetable, it is full of fibre and great for aiding the liver in detoxification. Chickpeas are a great source of vegetarian protein and are a great source of folate, iron and zinc. Also shown to improve blood glucose levels and lower cholesterol. I really love the combination of cinnamon and chilli together and love to roast my cauliflower and chickpeas.
Instructions
  1. Preheat oven to 180 degrees fan-forced.
  2. Line a baking tray with baking paper.
  3. Chop cauliflower florets up into bit size pieces and spread out on the tray.
  4. Drain and rinse chickpeas and pour onto tray.
  5. Spray olive oil over the cauliflower and chickpeas to coat well.
  6. Sprinkle over cinnamon, followed by some chilli powder.
  7. Place in the oven for 50 minutes until cauliflower is cooked and chickpeas are slightly crunchy.

Make sure you add some additional protein to this to create a meal along with additional vegetables.
