Cupcakes are associated with celebrations or treats and often they are loaded with lots of sugar and other nasty ingredients, so why not make them a little healthier.
I have used monk fruit – which is a natural sweetener in these to reduce the amount of other sugar required. Monk fruit works really well in baked goods and doesn’t leave an after taste.
Carrot Cake Muffins

As promised a healthy version of carrot cake, I have made into muffins as it is much easier to portion size out this way 🙂 Carrots are great for their vitamin A and antioxidant content and are so easy to add to muffins as they have a naturally sweet flavour. These muffins don’t contain much sugar and are kid friendly. Free of gluten, dairy, soy, eggs, nuts and refined sugars. No nasties!

Oats have been enjoyed across many cultures as porridge which makes a great warming breakfast during winter, however oats are so versatile and can be used in a range of different recipes. Oats contain fiber, protein, B vitamins, iron, manganese, selenium, phosphorus, zinc and potassium just to name a few. Oats are often renowned for being able to lower cholesterol levels due to their high fiber content, in particular a fiber known as beta-glucan. If you are a Coeliac like me, purchase the gluten free oats available at most health food stores.
Chocolate Coconut Cookies

Coconut flour is a great substitute to normal flour and is full of fiber, protein and healthy fats. Free of gluten makes it ideal for those that are intolerant or allergic. Coconut flour is easy to digest and low in sugar thereby great for keeping blood sugar levels in check. When it comes to cooking with coconut flour you do not require much flour like you normally would for recipes. It is very absorbent and requires 2-3 times the amount of liquid you would ordinarily use.

Who doesn’t like pancakes? We often associate pancakes as a weekend treat only, but why not make a healthy pancake that can be enjoyed every day. These pancakes are high protein and use buckwheat flour and a small banana for healthy complex carbohydrates to keep your blood sugar levels in check. Since I really like chocolate I have made a healthy chocolate sauce that can be added to serve.
