Quinoa is actually a seed, however cooked and used as if it were a grain. It is high in protein and contains all essential amino acids. Also a great plant based source of iron and rich in magnesium, B2, manganese and folate. I like to add it to quiches to build up the protein content.

Its light fluffy texture makes it ideal to use as a rice substitute and will give you the added bonus of extra nutrition without losing the flavour.
